One night my husband and I were trying to figure out what were were going to have for dinner. I saw what we had and came up with this bowl! I also made a side of creamy avocado dressing. I had two bowls of it!
One of the greatest things about this recipe is that you can meal prep it. It can be a grab-and-go, and it doesn’t take long to make.
Before we get into the recipe, I want to share a few ways of how you can eat it:
Taco salad bowl
Flour or corn tortillas
Or just have it the way it is
Creamy avocado dressing
Fresh lime juice
3 tbsp greek yogurt
2-4 tbsp water
Pinch of salt
Pinch of black pepper
Place all of your ingredients in a blender and blend until smooth.
If it’s too creamy, use small amounts of water to smooth out.
